京都の蕎麦店「にこら」(ミシュラン１ツ星）に行ってきました。
京町家を改装,グッチ 財布。店内にはご主人が惚れこんだというニコラ・ド･スタールの絵が飾られている（店名の由来）。
以前は岐阜で蕎麦屋を営まれていたそうですが、７年前にこちらへ移転されたみたい。

日本酒と焼酎の品揃えも充実しています。
照明や、ところどころの造作（トイレへのガラスのドアなど）がカッコイイ。

つゆはダシの効いた普通に甘みのあるタイプ,Chanel。

ざるそば￥９５０
蕎麦は常陸秋蕎麦をエージレスパック（脱酸素状態）にて摂氏７度にて保管。その日に使う分を石臼にて製粉（石臼粗挽き十割蕎麦）とのこと。
今年収穫の新そばに切り替わったかどうかは明らかではない（訪問は１１月中旬）。
香りはそこそこ。粗挽きの粒子が弾けたあとの甘みや香りもそこそこ。やや腰の抜けた感じがあるけど悪くはありません。
接客はアルバイトの男の子がとてもいい感じでした。学生のアルバイトなのですぐに入れ替わってしまうでしょうけどね,激安シャネル。
