One of my favorite ingredients in Chinese cooking is green beans. I imagine that the Chinese would be horrified to learn how we tend to treat this vegetable in the West. In the US, most holiday tables feature green bean casserole, a dish that I consider to be frankly a crucifixion of an otherwise noble food. Lovely fresh, crisp green beans are subjected to being drowned in a mixture that is primarily a can of what my mother called "cream of X soup." The beans are then sprinkled with store-bought fried onions and baked into a soggy oblivion. But in China, cooks seem to produce culinary works of green bean art that are chock full of flavor.In honor of green bean season, here are some authentic Chinese dishes featuring the vegetable, written in recipe form for the Western gourmet. Gan bian dou jiaoThis dish, literally meaning dry-cooked green beans, treats this ingredient with the reverence it deserves. Upon first sight, I crinkled my brow at the withered, nearly burned little vegetables, but upon first taste, any memory of eating green beans in the past was shot into outer space. Coated in a pungent yet thin sauce of garlic and chilis, the main ingredient is cooked on high heat until a wrinkly, blistered skin is left to hug its still juicy insides. I had to learn how this was made. Figuring out Chinese recipes is something I have taken as a personal goal during my time in China, and it requires a lot of trial and error. Along the way to writing this recipe, I learned a few important tricks.Because the beans need to be cooked in a generous amount of oil on high heat, thoroughly dry them with a towel to avoid spattering. Also, be sure to cut the beans into uniform lengths. Beans that outsize their companions manage to avoid contact with the wok, never really getting that hot sizzle that blisters the skin. If you are like me and you rarely glance at a menu without ordering gan bian dou jiao, this recipe may save a few kilos of green beans from ending up in the trash. As with any recipe, home chefs are advised to read through all steps and to prepare ingredients before beginning. Side dish for four.Ingredients:-300 g green beans,louboutin pas cher, rinsed, thoroughly dried, and cut into uniform lengths of 4 to 5 cm-80 ml peanut or other high-heat oil-pinch salt-100 g ground pork-6 dried chilis, cut into 2 cm lengths-1 tsp ginger-6 cloves garlic,hoganrains, minced-3 Tbs finely chopped white onion-1 tsp ground flower (Sichuan) pepper (hua jiao) or 1 ? Tbs whole flower pepper-2 to 4 tsp chili oil,louboutin, to tasteFor the sauce:-2 tsp rice wine-1 Tbs soy sauce-2 tsp sesame oil-1 tsp salt-1 tsp sugarSteps:1. Combine ingredients for the sauce. Whisk with chopsticks and set aside.2. Heat an empty wok over a high flame. When spray of water from fingertips disappears instantly, turn off heat. Add oil.3. Turn flame on medium-high and add green beans. Cook 7 to 8 minutes, constantly moving the beans, until skins blister and some turn light brown. 4. Turn off heat and immediately remove beans with a slotted spoon, placing them on a dish lined with paper towel. Sprinkle the beans with pinch of salt. Remove excess oil from wok.5. Turn flame back on to medium-high heat and put remaining ingredients into wok, not including sauce. Cook until pork is browned, about 4 minutes. 6. Turn off flame, add cooked green beans and give the sauce one more stir before pouring over ingredients. Work with a spatula until thoroughly mixed.7. Serve immediately.
